I do have a picture of this coming as well as a fun tip for your kids lunches or snacks. My camera battery is dead and the memory stick won't work in the computer for some reason. Camera is charging and I'll get the picture up. Hope you enjoy this soup...now that fall is here and it is getting much colder, we are looking for anything warm to eat!
Black Bean Soup
1 Tablespoon oil
1 onion, chopped
3/4 cup chopped carrots
2 cans chicken broth
2 cans (or 4 cups cooked) black beans
1-2 chopped jalapenos (or 1 small can green chiles)
1 1/2 teaspoons garlic powder
1 teaspoon chili powder
1/2 teaspoon oregano
1/8 teaspoon black pepper
salt to taste *
1 lime, cut into quarters
Cheese, chips, sour cream, etc for garnish
In large pot heat oil. add onions and carrots and saute for 3-4 minutes. Add in rest of ingredients and bring to simmer. Simmer 20-25 min or until carrots are tender. Remove bay leaf and scoop ingredients into blender (you might have to do it in batches). Blend until smooth (or if you want it chunkier, just pulse a few times). Pour into bowls. Give a squeeze of lime and serve with cheese, chips, sour cream.

My Notes:
*Since I used homecooked beans that don't have a lot of salt, I used 1 teaspoon of salt. If you are using canned beans you should defintately use less. Just season it to taste. We served this with just a little cheese on top and the kids loved it.
